Power Packing (Banana) Pancakes

Summer is coming and it’s time for pancakes! To celebrate our second publication of “Simple But Healthy Recipes,” I present a tasty idea for a seasonal and delicious breakfast. These power packing pancakes, which are sweetened with natural ingredients, will help you to boost your day and your workouts.

The combination of ingredients is based on a recipe given to me by my nutritionist, Fabiane Hertel, while preparing for my last marathon. It was true love at first bite. The only changes I made were adding some fruits and spices to make it a complete and powerful breakfast.

Now, let’s go to the ingredients and preparation!

Ingredients:

  • 1 medium size banana
  • 1 whole egg
  • cinnamon powder
  • 1 tsp honey
  • 4 strawberries
  • 1/4 cup of blueberries
  • 1/2 apple
  • 1 Tsp of cashew butter (optional, not shown in the picture)

Preparation: Smash the banana and mix it well with the whole raw egg. Add a dash of cinnamon powder. Pour onto a hot non-stick skillet. Cook both sides until they reach a light brown color. When ready, slide your pancake on a plate and top it with fresh strawberries, blueberries, and apple. Sprinkle additional cinnamon powder (if you wish), honey, and optionally, cashew butter.

Tip: Meanwhile, set up the coffee-maker for when your banana pancakes are ready.  Give yourself the gift of a nice cup of coffee to follow and make your breakfast a perfect starter for the day. #boostyourday

Nutritional Info: Here are some of the benefits these ingredients provide to your health:

bananas are a great source of potassium and help us to avoid cramps;

eggs and cashew butter contain good cholesterol and protein;

cinnamon powder is a natural anti-inflammatory;

apples carry high cardiovascular benefits;

strawberries have vitamin C and A; and

blueberries are great natural antioxidants and also are listed as among the world’s healthiest fruits.
