Mashed Vegetables with Love

The holiday season is here! It’s a time to be with our loved ones, our family and our friends. Being close to them also gives us the desire to cook something special. We want to look around and see the table surrounded by love. We want our guests laughing and having a wonderful time while enjoying and eating all the food we’ve prepared with so much love.

Inspired by these feelings, I offer you a very easy recipe that can be served with turkey, chicken nuggets, or, as in the picture, homemade meatballs cooked in the air-fryer. My recipe today is mashed vegetables.

Ingredients

  • Broccoli
  • Cauliflower
  • Pumpkin
  • Water
  • Onion
  • Salt
  • Pepper and,
  • Powdered garlic.

** I use approximately 1lb each of broccoli, cauliflower, and pumpkin.

Instructions

First wash the broccoli, cauliflower and the pumpkin well

Then chop them in medium pieces and place them in a pot.

Cover with water, add salt, powdered garlic and pepper

Put the pot on a stove over medium-high heat until it boils.

While the vegetables are boiling, sautée half an onion with a dash of organic extra virgin and a little bit of salt.

When the vegetables are tender, drain all the water.

Using a hand-mixer, mash the vegetables.

When the mashed vegetables and legumes are ready, add the onions and mix all together using a spoon.

 

This recipe is not only easy, but amazingly tasty and much healthier than ordinary mashed potatoes. This dish has protein, fibers, potassium, iron, and a huge range of vitamins. Don’t forget that broccoli is one of the healthiest foods on earth. Enjoy!
