Nuts, Cranberries, and Maple Syrup: Quick and Easy Granola

This easy granola is not only quick and healthy, it’s extremely forgiving, making it perfect for variations if you don’t have the exact ingredients. You can add the fruit after it’s been cooked but I like when the raisins or cranberries are all puffed out and warm after cooking. The granola makes a great holiday or hostess gift when you put it in a mason jar and tie a ribbon around it. Enjoy!

 

Ingredients:

3 cups of old fashioned oats

2/3 cup of almonds (walnuts and pecans work too)

½ cup of coconut (unsweetened)

1/3 cup of pumpkin seeds (raw)

½ teaspoon of salt

¼ cup of butter

¼ cup of maple syrup or honey

½ teaspoon of cinnamon

½ cup of raisins or dried cranberries

 

Preheat the oven to 325.

 

Mix the first 5 ingredients in a medium-sized bowl.

Melt the butter and add the maple syrup and cinnamon.

Pour the butter mixture into the bowl and combine well.

Transfer mix to a cookie sheet and put into the preheated oven.

Bake for 10 minutes, then stir. Bake another 10 minutes, then stir. Bake a final 10 minutes, then remove from oven. Should be slightly browned when its finished.
